Balsamic Chicken Salad Sandwiches
1 lb. grilled chicken breast, cubed
1 large Granny Smith apple, cubed
1 c. dried cranberries
¾ c. feta cheese, crumbled
¾ c. candied walnuts
½ small red onion, diced finely
½ c. mayonnaise
2 Tbsp. Teaoli White Balsamic Vinegar (any flavor you like)
1 Tbsp. sugar
Salt & pepper, to taste
8 pretzel rolls
1. In a large bowl, mix together the chicken, apples, cranberries, feta, walnuts, and red onion. Set aside.
2. In a smaller bowl, whisk together the mayonnaise, vinegar, sugar, salt, and pepper. Adjust seasoning as needed.
3. Pour the dressing over the chicken mixture and combine thoroughly. Spoon onto rolls and serve immediately.
