Balsamic Roasted Strawberry Italian Cream Soda
¼ c. honey or maple syrup
2 Tbsp. filtered water
½ c. coconut milk
Sparkling water or club soda, for serving
Preheat oven to 400° F. Toss strawberries with balsamic vinegar, honey/maple, and water in a shallow, oven-proof dish. Roast until strawberries become soft and juices are bubbling, about 20 minutes. Let cool slightly, then strain through a fine mesh sieve, pressing hard on the solids to extract as much juice as possible. Refrigerate syrup until completely cool. Place a few tablespoons of syrup (2-3) in the bottom of a glass. Add crushed ice and sparkling water, then top off with 2 tablespoons (more if you'd like it creamier) of coconut milk. Serve with a spoon and stir when ready to drink.
