Basil & Mint Blueberry Melon Salad
2 c. cantaloupe (about half a melon)
1 Tbsp. fresh mint
1 Tbsp. fresh basil, minced
1/4 c. fresh blueberries
1/2 c. feta or bleu cheese
1-2 Tbsp. Balsamic Vinegar (Dark Chocolate, Espresso, Strawberry, Traditional, Vanilla, or Wild Blueberry)
Extra Virgin Olive Oil, for drizzling (Basil, Blood Orange, Chipotle, Cilantro & Roasted Onion, Eureka Lemon, or Persian Lime)
Sprinkle of sugar, for garnish
Carefully slice canteloupe in half, remove seeds and peel, and dice into 1-inch cubes. Mince herbs finely and combine with melon, blueberries, and cheese. Drizzle vinegar over everything and toss to combine well. Drizzle olive oil and sprinkle sugar and serve chilled.
