Caprese Baked Egg Cups
1 pint grape tomatoes, halved
3-4 oz. mozzarella cheese, chopped
8-10 fresh basil leaves
2 tsp. cream or milk
2 Tbsp. Teaoli Extra Virgin Olive Oil (any flavor you like)
Salt & pepper, to taste
1. Preheat oven to 350° F.
2. Use olive oil to grease four ramekins, then fill with a few pieces of tomato, cheese, and basil. Crack two eggs into each and season with salt and pepper.
3. Add ½ tsp. of cream or milk to each to keep it from drying out, then add more tomato, cheese, and basil on top of the eggs. Drizzle with a little more olive oil.
4. Place on a baking sheet and bake for 5-8 minutes, then turn on the broiler for three more minutes of cooking (increase to five minutes for firm yolks).
5. Serve hot with crusty, toasted bread. Drizzle with any flavor Teaoli Balsamic Vinegar if desired!
