Easy Balsamic Glazed Salmon

Ingredients:

2 salmon filets (about 5 oz. each)
2 tsp. Olive Wood Smoked Extra Virgin Olive Oil (or flavor of your choosing)
2 cloves garlic, minced
2 Tbsp. Balsamic Vinegar (nearly any flavor will do, but for the deep brown glaze color, we suggest a dark balsamic)
2 tsp. honey
2 tsp. dijon mustard
½ tsp. kosher salt
¼ tsp. black pepper
Fresh parsley, chopped, for garnish

Preparation:

Preheat oven to 400°F. Line a baking sheet with aluminum foil or parchment paper, then coat with nonstick cooking spray. In a small skillet, heat olive oil over medium heat. Add the garlic and cook until fragrant, about two minutes, making sure the garlic does not burn. Add balsamic vinegar, honey, mustard, salt, and pepper. Whisk and simmer until thickened, about four minutes. Place salmon skin-side down on baking sheet, brush with glaze, and bake until fish is cooked through, about ten minutes, reapplying glaze halfway through cooking. Sprinkle with chopped parsley and serve with a side of spinach.
