Fun-Size French Toast Bites

Main Ingredients:
6 eggs, beaten
1 c. milk
1 tsp. vanilla extract
¼ tsp. nutmeg
¼ tsp. cinnamon
½ loaf bread, crusts cut off, cubed
Sauce Ingredients:
1 c. blackberries
1 Tbsp. Teaoli Balsamic Vinegar
(Blackberry GingerEspressoVanilla)
1 Tbsp. lemon juice
Honey or Maple Syrup, to taste


Combine sauce ingredients in a pot over medium heat. Stir to break up fruit pieces and let simmer about ten minutes. Set aside. Preheat oven to 350°F and grease a mini-muffin tin or line with paper cups. Crack eggs into a large bowl, then add milk, vanilla, cinnamon, and nutmeg. Whisk to combine, add bread cubes, and mix well. Let sit 5 minutes to absorb, then spoon into muffin tins until each cup is about half full. Add a spoonful of sauce, then more bread mixture. Bake 25 minutes or until puffed and golden-brown around edges. Remove from the oven and let cool before removing bites from muffin tin. Serve warm with syrup or more sauce. Use toaster oven to reheat.
