Hot Kale and Bacon Dip

2 tsp. Extra Virgin Olive Oil
(CayenneChipotleCilantro & Roasted OnionGarlicGreen ChiliEureka Lemon, etc.)
1 medium onion, diced
2 garlic cloves, minced
1 ½ lbs. kale, cleaned, trimmed, chopped
⅓ c. milk
6 oz. cream cheese
1 tsp. Worchestershire sauce
2 tsp. hot sauce
¾ c. shredded mozzarella cheese
5 strips bacon, cooked and chopped
Coarse salt & freshly cracked black pepper
Parmesan cheese, for topping
Tortilla chips, for serving

In a large pan over medium heat, add olive oil and onion, and sauté until lightly browned. Add garlic for the last thirty seconds and stir to combine. Add kale and cook until wilted, 5 to 8 minutes. Transfer to a colander, drain, and press to release excess liquid. In the same pan, heat milk over high heat. Whisk in cream cheese until melted, about 3 minutes. Add kale, Worcestershire sauce, hot sauce, and mozzarella; stir to combine. Stir in bacon, season, and simmer over medium low heat for ten minutes. Top with Parmesan cheese and bake at 425° for ten minutes. Serve.
