Raspberry Roasted Walnut Salad

Ingredients:

1/2 cup toasted walnuts

1/2 cup dried cranberries

1 red onion sliced thin

Spring mix or any lettuce you enjoy 

1/2 cup Teaoli Raspberry Balsamic

1 cup Teaoli Varietal EVOO (any variety)

1/2 tsp Dijon mustard

Salt and pepper to taste


Directions:

Soak red onion in ice water for about 1/2 hour (takes the bitterness out). Drain well. Toast walnuts in a sauté pan, when fragrant remove from heat. Wash & dry the lettuce of your choice. Whisk and blend Teaoli Raspberry Balsamic, Teaoli EVOO, mustard, salt & pepper. Add to your lettuce the nuts, berries, onions & toss with dressing.
