Southwest Pesto

Ingredients:

1/2 cup baby leaf spinach, chopped

1/2 cup cilantro, chopped

1/2 cup sun-dried tomatoes in oil

1/3 cup Teaoli Cilantro Roasted Onion EVOO

1 tbsp diced green chilies, or jalapeno for more heat

1 clove of garlic

1 tsp brown sugar (optional)


Directions:

In blender or food processor, process all ingredients until mixture is smooth, scraping down the sides of the blender with a rubber spatula as needed. Salt and pepper to taste. Serve on pasta or as a spread on your favorite crusty bread.
