Ingredients:
3 large sweet potatoes, peeled and cut into 1 inch cubes
2 tbsp Teaoli Chipotle olive oil
2 tbsp brown sugar
1/2 tsp salt
1/4 tsp cayenne pepper
Directions:
In a zip-top plastic bag, toss potatoes and oil. Combine remaining ingredients; add to bag; toss to coat. Transfer to a greased 11x7 inch baking dish. Bake, uncovered, at 375 degrees for 40-45 minutes or until potatoes are tender, stirring every 15 minutes.
